These eggs are unfertilized duck eggs for culinary purposes (they will not hatch out ducklings). Duck eggs come in approximately Large-Jumbo size and are typically unwashed. Keeping the "bloom" on unwashed eggs allows them to stay fresh for a significantly longer span of time. However, it is HIGHLY RECOMMENDED to wash the eggs prior to using them - just be aware that after washing they must be kept refrigerated and are good for 1-2 weeks after.
Ducks are not like chickens in the sense that they like to lay their eggs anywhere (not nice and neat inside a nest box). This means their eggs are more often than not, dirtier. I still do not wash the eggs so they are as fresh as possible when they arrive to you, just be aware that they may have some sand/dirt on them - the presence of which does not affect the inner quality of the egg.
Duck eggs are larger than chicken eggs and typically have a clear white (whereas chickens have a slightly off yellow color) and orange yolks. They are creamier when cooked, higher in protein content, and have an "eggier" flavor. Best used in cooking as it makes dishes "fuller", rise better, and creamier though you do need to adjust egg quantity due to the size of duck eggs.
Ducks slow or entirely stop their egg laying in times of extreme heat or cold as well as during molts - product availibility will be dependent upon supply.
